From October 6 to 10, as part of the gastronomy marathon “Taste Sakhalin”, the “GastroCamp Sakhalin 2025” took place. The project team, led by the ICWAG president L. Gelibterman, included chefs Evgeny Alfan (Moscow), Sergey Khrkhryan (Rostov-on-Don) and pastry chef Leyla Kashapova (Kazan). In Yuzhno-Sakhalinsk, chef Pavel Vasiliev from Petropavlovsk-Kamchatsky joined the team.
“GastroCamp is an excellent opportunity to ‘reset’ both chefs and local residents so that they appreciate the gifts of nature, take pride in local products and get inspired to create traditional dishes in a new interpretation,” noted Nataliya Pakholkova, First Deputy Minister of Tourism of the Sakhalin Region.
As part of the business program of the project, with the participation of heads of ministries and departments of the Sakhalin Region, as well as leading restaurateurs and representatives of the tourism business, discussions were held on the development of gastronomy tourism and personnel support for the hospitality industry.
At the gastronomy space “Zharym Varim”, open master classes were held for students, professionals and city residents on preparing original dishes using local products.
The GastroCamp team visited more than 10 catering establishments in Yuzhno-Sakhalinsk participating in the “Taste Sakhalin” gastronomy marathon and provided expert recommendations.
The project culminated in a gastronomy show by federal and regional chefs. They prepared a traditional Russian “kulebyaka in Sakhalin style”, combining features of Russian cuisine, Sakhalin Korean cuisine and notes of Japanese cuisine. The team then presented a set of banchans — Korean snacks and salads familiar to all island residents. The new interpretation of the dish featured a combination of cherries, wild green onions, wakame seaweed with “shabu-shabu” sauce, previously marinated in boiled garlic with ginger. An exotic note was added by plums marinated in teriyaki sauce and sliced carrots. For dessert, numerous guests were offered to try marshmallows with the famous local clopovka berry.
The gastronomy show ended with enthusiastic applause from the guests to the team, and the best island chefs, regional catering establishments and students of the Sakhalin Service College were awarded diplomas by the Ministry of Tourism of the Sakhalin Region.
In 2026, the Sakhalin Region plans to host the international forum-festival “GastroIslands”, dedicated to the development of the “islands cuisine” concept, and the city of Yuzhno-Sakhalinsk has decided to participate in the “Creative City” project of the Higher School of Economics in the “Gastronomy” direction.
The Sakhalin Region is a participant in the ASI “ProEDU across Russia” program, aimed at developing the gastronomy industry in the constituent entities of the Russian Federation.
