El Cena Cocina 2025: From Knowledge to Taste — The Art of Fermentation

Chef Anton Salnikov, an expert of the Gastronomy Tourism Committee of the Russian Union of Travel Industry, has returned from a trip to Colombia, where he participated in the forum “El Cena Cocina 2025: From Knowledge to Taste — The Art of Fermentation”.

The main objective of the forum is to transfer knowledge about cultures, traditional cuisines, and cultural heritage, as well as to promote traditional fermentation methods.

Anton Salnikov presented Russian fermentation traditions and delivered a report titled «Tastes of Time: Fermentation and Heritage». During his visit, the chef conducted a series of master classes for students — future chefs of La Guajira Department. Mr. Salnikov also participated as an expert judge in the competition of dishes made from fermented products of the region.

The event was organized by the Colombian national training service SENA (Servicio Nacional de Aprendizaje). The co-organizer of the trip is the National Committee for the Promotion of Economic Cooperation with Latin American Countries (CN CEPLA).
